GLUTEN FREE CINNAMON BUNS
These are truly wonderful. I researched a number of recipes for inspiration, and found this one from RecipeZarr under Cinnabon-ish cinnamon rolls, by Andrew Mollmann.
For a tasty treat, check it out! Truly, these are like regular gluten cinnamon buns – the texture was perfect! These are the best cinnamon rolls I have ever had!
I did however, make a few changes as I found the original recipe too sweet, and too strong in cinnamon flavor. (I use Saigon Cinnamon which is quite strong) As well, I reduced the amount of millet flour from 1/2 to 1/4 of a cup incorporating Sweet Rice Flour instead and used less brown sugar in the cinnamon mix. The results – Fantastic! Thank you Andrew Mollmann at RecipeZarr for Cinnabon-ish cinnamon rolls!
For the icing, I replaced the cream cheese with yogurt cheese and added up to 1/3 of a cup strong coffee for flavor.. what can I say… my family is obsessed with mocha…..so yummy!
