SCRUMPTIOUS CRAB CAKES

What a treat this was!  I love seafood – all seafood, except Sushi, which I may have mentioned before.  DH, dislikes most seafood, I may have mentioned that before too.  So the only time I cook like this is when I know my kids will be visiting and DH is away, or has an evening gig doing music.  My daughter was over, oh it was sooo time for crab cakes.

Believe it or not, I found this at Costco:

It is real, caught wild, fresh, cooked crab claw meat.  When I opened the package, set it in a strainer to drain I had to have a taste.  So fresh, so sweet, so flavorful!  It is not like canned crab meat at all.   This is the real thing folks. There are so many ways to enjoy this lovely seafood.  On top of salads, in a sandwich, on pasta…I am in love!  Now here is the scoop:  I have seen similar packed crab meat at our local grocery stores, but at $15.99 for 440 grams, I don’t think so.  At Costco, the regular price here is $9.99, however, the day I purchased this, it was on sale for $7.99!  Now I wished I had bought two.  This is fabulous crab meat, I can’t say enough about it.  It was so good, my dtr. and I had it served simply, with my homemade tartar sauce.  Filling and delicious.

440 grams of real crab meat, drained

2 Tblsp. finely minced red onion

1-2 Tblsp. freshly minced Flat Leaf Italian Parsley

1/2 cup of Mayonnaise

2 tsp. Dijon Mustard

1 tsp. dried dill

1 egg

3/4-1 cup gluten free bread crumbs

1 tsp. Old Bay Seasoning (it contains salt, so I did not add in any extra salt)

Fresh Cracked Pepper

Mix all of the ingredients together in a bowl.  Shape into patties, and place onto a plate. Cover in plastic wrap, refrigerate 30-40 minutes.

This is a delicate mixture, so what I did was preheat a heavy cast iron pan on medium to medium high heat with a good drizzle of olive oil.  Once heated, add the crab cakes.  Cook about 8 minutes, before turning to the other side.  They want to have a nice golden color then gently flip to the other side.  Cook another 5-6 minutes, transfer to a plate and serve hot.

  • These look so yummy, I am going to try them replacing the bread crumbs with seasoned almond flour. I will let you know how it works. I am hoping I can find the crab meat at Costco here in the U.S. If not does canned meat work? Or should I get it at the seafood counter? Not sure, I don’t have much experience with crab.

    Karen, you could use canned, but it won’t taste nearly as good. I would go to the seafood market for sure. Let me know how yours work out!
