RECIPE REVIEW: BEET PESTO PIZZA WITH KALE AND GOAT CHEESE

Wanna bite?  Trust me….yes you do.  Oh.  My. Goodness.  This was a most delicious pizza.  Who would ever have thought that beet pesto could be so delicious?  Then add kale and goat cheese?  This is truly a marriage made in heaven.  This lovely recipe came from THE ROASTED ROOT.  Please check out this blog for the original recipe as I did make a couple of changes to the pizza we had this nite.

I stumbled upon The Roasted Root, quite by happy accident.  We had just received our weekly organic veggie box from our Sooke local farm, and there were some lovely bunches of beets as well as some beautiful kale included in this weeks delivery.  I was scooting around the internet looking for different beet recipes when I found Julia’s Beet Pesto Pizza With Kale & Goat Cheese Recipe.  Beet Pesto?  This was intriguing.  Now that I have made it, I will say it again:  Oh. My. Goodness.  A great flavor combination!

I used my own adapted Gluten Free Pizza Recipe, which also includes herbs in the pizza crust.  So that added another dimension to this pizza.  I also added sauteed mushrooms and caramelized onions to the pizza.  The goat cheese we used was a roasted garlic herb Chevrai, plus, we used Aged Cheddar Cheese instead of Mozzarella.

I had a hunch I was going to luv this pesto so I made a double batch and lo and behold, it freezes beautifully.  By the way, my daughter joined us for dinner this nite….she was doing the happy dance while devouring the pizza.   Many thanks Julia, your Beet Pesto Pizza With Kale And Goat Cheese is a sure winner in this household!
