RECIPE REVIEW - VEGAN CASHEW CREAM CHEESE

Wow…I was so impressed with this amazing recipe from Cassidy whose blog is Cooking Gluten and (Dairy) Free.  If you are dairy free this is a recipe you will want to check out.

As I was making this recipe – I could hardly stop tasting it – it was that good.

Remember my steal of a deal blender?

I did not think this blender had the capacity to smoothly whip up this vegan cream cheese.  It did take a bit of time, and I had to scrape down the sides a few times, as well as add a bit more liquid to the recipe than what it called for.  It turned out super smooth and delicious.  If you have a VitaMix or BlendTec blender it will be super easy to make.

This cashew cream cheese is delicious on it’s own, or with crackers, as a dip for vegetables and even as a spread on sandwiches.

If you are looking for an alternative to cream cheese – this is a must try.  Thank you Cassidy for such a great recipe!

  • Dang you are hitting on some great things these days. I love cashew cream cheese. The first time I used something similar was a cashew sour cream recipe from GF girl that I used in a wild rice dish. Thanks too for the link to another great blog.

    Thanks Cari. Ohhh cashew sour cream with wild rice? Yum. (I have more recipes using this luscious cashew cream cheese under way – so tasty!)

  • Cassidy’s cashew cream looks delicious, but her recipe calls for ‘coconut creamer’… I googled it, and I still don’t know what that is… We have cans of coconut cream… is that the same thing?

    Janet – I do not know what Coconut Creamer is either. We have cans of coconut cream too. I just used Soy Milk, and it turned out fabulous. I am sure Almond milk would work well too.

  • I love the idea of using cashew cream in sandwiches! Bet it was delicious!

    ps: There’s a brand “So Delicious” that makes coconut creamer to be used in coffee or any recipes. I think that’s what Cassidy must have used in her recipe. Just thought to share it with you and Janet :)

    BTW- Kiran was right, I use the SO Delicious brand coconut creamer (used for coffee) because it has a very neutral taste but any milk alternative will work.
