PARMIGIANO REGIANO PASTA WITH ITALIAN SAUSAGE

This was a good way to use Italian Sausages.  And what is not to love about Parmigiano Regiano Cheese.  I may have mentioned in previous posts, we have a lovely market that sells delicious Gluten Free Sausages, of all kinds.  What I did do, was to remove the meat from the casings.  A nice change [...]

CAULIFLOWER BACON MAC AND CHEESE

The inspiration for this dish came from Jamie’s meals in minutes.  It really was a yummy dish.  I love the addition of cauliflower to this dish, and the breadcrumb mixture?  Divine!  Now, I did do my best to make this in 30 minutes.  It did not happen…this took me 45 minutes.  I am just not [...]

TURKEY TETRAZZINI

This may well become a Christmas Turkey Leftover Tradition each year in this house….wow, so good!

There are many wonderful Tetrazzini recipes out there.  After looking at different recipes, I took a few ideas from here and there, then added in my own ideas too.  If you have 2-3 cups of leftover Turkey, 1 cup of [...]

SHRIMP AND SCALLOP PASTA, IN A LEMON TARRAGON SAUCE

Checking with The Flavor Bible – another recipe emerged. This book is such an inspiration.  I knew I wanted to use yogurt, and bacon, but combining the Tarragon, Dijon,  lemon, green onions, made this dish light and flavorful.

2 1/2 cups yogurt

4 slices, chopped bacon

1 large minced shallot

4 minced garlic cloves

1 Tblsp. Dijon mustard

1 large bay [...]

A SIMPLE SUMMER PASTA

This is a quick, and easy summer pasta dish, served with a fresh green salad and in 30 minutes or so, dinner is done!   Fresh Basil is so wonderful when you have waited all year for it’s return.

With this dish, I used Tinkyada Gluten Free Fusilli pasta.  The directions say to cook 10-12 minutes, mine [...]

CREAMY BACON BROCCOLI DIJON PASTA

Phew!   That was a long title for this pasta.  I did not know what to call this pasta dish – there were so many components but so easy to whip up too.  And did I mention mighty tasty? I love coming up with new pasta dishes with just what I have on hand.  Actually [...]

GARLIC PRAWNS WITH PESTO PASTA

This was such a quick, simple delicious meal, great for when you have had a busy long day.  Plus, any leftovers would make a wonderful salad for lunch the next day.

One dozen prawns, de-veined, peeled, tail off (I used frozen, that I thawed in the refrigerator)

butter

1 sliced garlic clove

Pasta:

2 cups Tinkyada Rice Pasta shells

4 heaping [...]

LASAGNA

I cannot remember the last time I cooked Traditional Lasagna.  By traditional, I mean Lasagna in a meat sauce.  My family loves the Vegetarian Lasagna I make, but for a change it was lovely to  have Lasagna with a meat sauce.  I used the yogurt cheese filling similar to the Vegetarian Lasagna, but will do [...]

ASIAN NOODLE SALAD

A lovely recipe to share, and a story to tell:

Recently, my Best Friend and I went out to lunch.  We had a day of wondering through Antique Stores, Second Hand Vintage Stores, and her fave, gem stores looking for stones so she could make jewelry.  It was a fun day, a day we do not [...]

PASTA WITH SQUASH LEAK AND BACON

I have often heard of incorporating purred squash into pasta dishes, but never thought it would taste good.  I was wrong.  It is a lovely combination, and healthy too!  I used bacon in this recipe, but ham would be tasty as well.

1 1/2 cups purred squash, I used Hubbard squash

6 slices of bacon, chopped small, [...]
